Pesto alla Genovese is a traditional condiment from Liguria, named after the word “pestare”, referring to the original method of grinding the basil in a stone mortar. The star ingredient is the DOP Genovese basil, combined with extra virgin olive oil, Parmigiano Reggiano, Pecorino, pine nuts, garlic, and salt to create a unique and authentic flavor.
